Thin jalapeño rings are marinated with red onion and carrot slices in a simple marinade of white vinegar and sugar. This is enough to create a delicious, savory snack with sweet-tart notes. When slicing the jalapeños, be sure to wear rubber gloves to prevent any juices from accidentally getting into your eyes. After pouring the marinade over the vegetables, let them sit for at least an hour before enjoying. Serve the jalapeño and carrot with a variety of dishes, and store the sealed jar in the refrigerator, where the flavor will intensify with each passing day.
