How to Make Coffee Bread

Become a true baker and bake a fragrant and delicious coffee bread at home with the addition of cocoa and coffee. These ingredients, along with molasses and honey, enhance the flavor and aroma of this coffee bread without turning it into a dessert, and also give it a perfectly even brown color. The dough is made with dry yeast and a mixture of bread flour and whole wheat flour. It's best to bake two small loaves of bread, which will bake better and more evenly than one large loaf.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 1.5 cups warm coffee (about 37°C)
  • 1 tbsp. l. brown sugar
  • 2 and 1/4 teaspoons active dry yeast
  • 2 and 1/4 cups bread flour
  • 1.5 cups whole wheat flour
  • 1 tbsp cocoa powder
  • 1/3 cup honey
  • 2 tbsp (30 g) salted butter, softened
  • 2 tablespoons molasses
  • Olive oil, for greasing the bowl and drizzling over the dough

Cooking the dish according to the recipe:


  1. Combine warm coffee and brown sugar in a small pitcher. Stir in the yeast and set aside for a couple of minutes to allow it to bloom.
  2. In the bowl of an electric mixer, combine the bread flour, whole-wheat flour, and cocoa powder. Add the yeast mixture, honey, butter, and molasses. Using the dough hook, mix everything at medium speed until a ball of dough begins to form, about 2 minutes. Reduce the mixer speed to low and knead for another 6 minutes.

  3. Grease a large bowl with olive oil, place the dough in it, and cover with plastic wrap. Place in a warm spot in the kitchen and let rise until doubled in size, about 2 hours.
  4. Divide the dough in half, form two tight balls, and place them on a baking sheet. Drizzle with olive oil and cover loosely with plastic wrap. Let the dough rise again for 45 minutes or up to 1 hour.
  5. Preheat oven to 190°C.
  6. Once the dough has risen, remove the plastic wrap. Using a serrated knife, score a cross on the surface of each loaf. Carefully transfer the dough to two 10-inch cast-iron skillets. Place the skillets on a rack in the center of the oven and bake until golden brown, about 30 minutes. Then transfer the loaves to a rack and let them cool for at least 15 minutes before slicing.
