Galbi (meaning "ribs" in Korean) is marinated, grilled spare ribs. It's made from beef short ribs with plenty of meat on them. Before grilling, the ribs are marinated for several hours in a marinade made from soy sauce, cooking wine, brown sugar, sesame oil, any vegetable oil, and garlic. This mixture imbues the meat with stunning Asian sweet and spicy flavors. Grilling the marinated ribs takes just a couple of minutes per side. In Korea, galbi is typically eaten with rice or wrapped in lettuce leaves.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 1 cup soy sauce
  • 0.5 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/4 cup cooking wine
  • 2 tbsp. l. sesame oil
  • 2 tablespoons of vegetable oil
  • 4 cloves garlic, crushed
  • 1.8-2.2 kg beef ribs with meat, 0.8 cm thick, with marbled veins

Cooking the dish according to the recipe:


  1. In a large bowl, combine the soy sauce, granulated sugar, brown sugar, wine, sesame oil, vegetable oil, and garlic. Add the beef ribs and toss to coat with the marinade. Cover and refrigerate for 3-4 hours (don't marinate too long, or the meat will dry out).
  2. Preheat the grill to high heat. Remove the ribs from the marinade and cook for about 2-3 minutes per side (or less if they're thinner than 0.8 cm).
