This dish is made with short ribs, cut from the sides or brisket. They are meatier and can be cooked boneless. Although short rib meat is somewhat tough, it becomes incredibly juicy and tender when cooked properly. This oven-baked recipe yields the same flavor as grilled meat, but it takes less time to prepare. Barbecue sauce added during the baking process imparts a distinctive, savory flavor and aroma of char-grilled meat.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 2 kg of boneless beef short ribs, cut into 7.5 cm long pieces.
  • 2/3 cup brown sugar
  • 1 teaspoon paprika
  • 0.5 tsp garlic powder
  • 1 tbsp. table vinegar 5%
  • 0.5 tsp ground dried thyme
  • 2/3 cup ketchup
  • 1 tbsp mustard
  • 1 tbsp Worcestershire sauce

Cooking the dish according to the recipe:


  1. Preheat oven to 150°C.

    Place the ribs in a 22x32 cm baking dish, season with salt and pepper to taste.

    In a small bowl, combine all remaining ingredients. Pour the sauce over the ribs and mix thoroughly.
  2. Cover the meat with aluminum foil and bake for about 3 hours, until tender and cooked through. Remove the foil half an hour before the end of the roasting process to create a crispy crust.

    Transfer the finished ribs to a platter and serve.

    This dish is paired with Cabernet Sauvignon red wine.
