How to Make Whole Wheat Cheese Rolls

Whole wheat flour, mixed with all-purpose flour, not only fills these buns with healthy fiber but also imparts a warm, slightly nutty flavor and aroma that pairs beautifully with the finely chopped herbs and soft, garlicky cheese mixed into the dough. Other ingredients include butter, which is folded into the dough with a knife, and light cream. It's important not to knead the dough, but simply gather it together to create layered buns. To make these layers appear appetizingly on the sides, cut the dough into squares, cutting the knife straight down rather than sideways.

Recipe:

In a large bowl, combine 1 cup whole-wheat flour, 2/3 cup all-purpose flour, 1 tablespoon each chopped parsley and chives, 2 teaspoons baking powder, and 3/4 teaspoon coarse salt. Stir in 6 tablespoons cold, diced butter, then fold in half a 5-ounce package of soft garlic and herb cheese to form pea-sized pieces. Fold in 2/3 cup light cream with a fork. Form into a 4 x 8-inch rectangle; cut into 8 squares. Bake at 450°F (230°C) until golden brown, 15 to 17 minutes.
