Give the classic English Tom Collins a more intense, fruity flavor and aroma by adding freshly squeezed tangerine juice and celery to the traditional ingredients—gin, sugar, lemon juice, and soda water. Both the celery stalk and leaves are used in the drink. Make a flavorful simple syrup from the chopped celery stalk and sugar, which is then combined with the other cocktail ingredients. Serve over ice and garnish each glass with a lemon wedge and celery leaves.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 2 cups chopped celery (about 4 stalks) + leaves for garnish
  • 2/3 cup sugar
  • 2 cups gin, chilled
  • 1.5 cups freshly squeezed lemon juice (from about 6 lemons), chilled + lemon wedges for garnish
  • 1 cup freshly squeezed tangerine juice (from about 6 tangerines), chilled
  • Chilled sparkling water, for serving

Cooking the dish according to the recipe:


  1. Combine chopped celery, sugar, and 2/3 cup water in a small saucepan. Bring to a boil over medium heat and cook, stirring, until the sugar dissolves, 1-2 minutes. Let cool, about 30 minutes.
  2. Strain the celery syrup into a pitcher and add gin, lemon, and tangerine juice. Pour into glasses filled with ice and top with soda water. Garnish each glass with a lemon wedge and celery leaves.
