Welsh toast is crispy toast topped with a rich cheese sauce. It can be served for breakfast, as a snack, or as a side dish. This recipe uses a cheese sauce made with porter, heavy cream, and cheddar cheese, creating a silky, thick sauce with a piquant flavor from Dijon mustard, Worcestershire sauce, and hot sauce. Prepare it just before serving, then drizzle it over the toast and enjoy immediately.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 4 slices toasted rye bread
  • 2 tablespoons unsalted butter
  • 2 tbsp. premium flour
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 0.5 tsp coarse salt
  • 0.5 tsp ground black pepper
  • 0.5 cups of porter (beer)
  • 3/4 cup heavy cream
  • 170 g of grated cheddar
  • 2 drops of hot sauce

Cooking the dish according to the recipe:


  1. In a medium saucepan, melt the butter over low heat and whisk in the flour. Cook, whisking constantly, for 2-3 minutes, being careful not to brown the flour. Stir in the mustard, Worcestershire sauce, salt, and black pepper until smooth.
  2. Add the beer and whisk. Pour in the cream and stir until smooth. Gradually add the cheese, stirring constantly, until melted and the sauce is smooth; this will take 4-5 minutes. Add the hot sauce. Drizzle over the toast and serve immediately.
