Bandeja paisa is a traditional Colombian dish consisting of a large plate filled with beans, rice, fried eggs, fried plantains, chicharron (fried pork rind), corn tortillas, and meat or sausage. The rice and fried egg are placed in the center of the plate, with the remaining ingredients arranged around it. The dish is incredibly filling, so be sure to be very hungry before you begin. The word bandeja means "tray" or "large plate" in Spanish, and paisa is the name of a people living in the northwestern regions of Colombia.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 4 cups red beans (such as kidney beans)
  • 1 tbsp. salt
  • 2 green plantains, diced
  • 1 small carrot, grated
  • 1 pig's hoof
  • 2 tablespoons of vegetable oil
  • 2 tbsp tomato paste

Cooking the dish according to the recipe:


  1. Rinse the beans before cooking, then place them in a pressure cooker half-filled with water and add 1 tablespoon of salt. Cook the beans for about 30 minutes. Then open the pressure cooker and add the remaining ingredients. Cook for another 20 minutes and serve with the pork knuckle or on its own.

    Serving options


    Bandeha paisa can be served with 220 grams of grilled beef steak, steamed white rice, fried sweet plantains, fried pork rind, a fried egg on top of the rice, and a corn tortilla. The rice should be in the center of the plate, and the beans on the left side. The remaining ingredients can be arranged on the plate as desired.
