To ensure it's tender and smooth, follow this simple rule: gradually pour the polenta into the simmering broth in a thin stream, whisking constantly until the porridge is lump-free. The secret to this polenta's creamy texture and buttery flavor is mascarpone cheese. Stir it into the finished polenta along with Parmesan and butter until the cheese literally melts into the mixture. Sprinkle the polenta with fresh parsley and enjoy its incredible texture and rich, creamy flavor.

Cooking the dish according to the recipe:
- In a large saucepan over medium heat, melt 2 tablespoons of butter. Add the onion and garlic and cook until the onion is translucent, about 5 minutes. Add the chicken broth and bring to a simmer.
