A recipe for baked peaches with mascarpone. Peaches are poached in a syrup made from liqueur, butter, and brown sugar. They are then grilled and served with mascarpone cheese.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 4 peach
  • 1/4 cup cheese mascarpone or heavy cream
  • 1/3 cup elderflower liqueur or sweet dessert wine
  • 1 tbsp (15 g) unsalted butter
  • 2 tbsp and 2 tsp Demerara cane sugar

Cooking the dish according to the recipe:


  1. Preheat the oven to broil. Cut the peaches in half and remove the pits, then lightly score the cut edges with a knife in several places.
  2. In an ovenproof skillet, combine the liqueur and butter and heat over medium heat. Cook, stirring, until the butter has melted and the liqueur begins to simmer gently.

    Place the peaches cut-side up and cook for 4 minutes, until the bottoms are soft. Sprinkle each peach half with 1 teaspoon of sugar and place the pan in the oven.

    Bake for 3 minutes, until brown spots begin to appear on the peaches. Cool slightly.

  3. Arrange the peaches on plates and drizzle with the syrup from the pan. Serve with mascarpone cheese.
