Pickled peaches

Tart and sweet pickled peaches are an interesting alternative to more traditional canned peaches in syrup, as they're perfect not only for desserts but also for meat dishes, sauces, and relishes. Choose firm peaches for pickling, as they'll soften after boiling and steeping in a spiced brine. The marinade uses white wine vinegar, sugar, coarse salt, red pepper flakes for a piquant, spicy note, and a ready-made marinade spice mix. After 24 hours, the peaches are ready to enjoy. Try them with cake, ice cream, or roast pork or chicken.
The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:
- 6 firm but ripe peaches, quartered, pitted and peeled (about 2 kg)
- 1 tbsp. pickling seasoning
- 1/4 tsp red pepper flakes
- 5 tbsp of water
- 2.5 cups white wine vinegar
- 2 tbsp. sugar
- 1 tbsp coarse salt

Cooking the dish according to the recipe:
- In a dry medium saucepan over high heat, toast spices for pickling and red pepper flakes until fragrant, about 30 seconds. Add water, vinegar, sugar, and salt and bring to a boil, stirring to dissolve the sugar. Add the peaches and simmer until soft, about 20 minutes. Using a slotted spoon, remove the peaches from the liquid (do not discard it) and set aside until cool enough to handle.
- Peel the peaches and discard the skins. If the skins are difficult to remove, don't worry—the peaches will still be beautiful and delicious. Transfer them to an airtight container, pour the reserved marinade over them, and refrigerate for at least 24 hours. Peaches can be stored tightly sealed in the refrigerator for up to 1 week.
