A peach and prosciutto appetizer might seem like a strange idea, but don't be so quick to jump to conclusions! You'll experience an incredible combination of sweet fruit (the flavor intensifies after baking) and salty ham. Drizzle juicy baked peaches with olive oil and balsamic vinegar, sprinkle with refreshing mint, and wrap in strips of prosciutto. A perfect treat for parties and buffets!


Ingredients:

  • 2 ripe peaches, each cut into 4 pieces
  • 1 tbsp olive oil + extra for drizzling
  • 1/4 cup mint leaves, coarsely chopped
  • 4 thin slices prosciutto (about 60g), halved lengthwise
  • 1 tbsp white balsamic vinegar
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Position the oven rack in the middle position and preheat the oven to broil. Line a baking sheet with foil.
  • Step 2
  • Gently toss the peaches on the prepared baking sheet with 1 tablespoon of olive oil, season with salt and pepper to taste, and arrange them cut-side down.
  • Step 3
  • Grill until the skins are lightly charred, about 5 minutes. Flip the peaches over so the skins are facing down and continue grilling until the tops are lightly browned, another 5 minutes. Drizzle lightly with olive oil and let cool slightly.
  • Step 4
  • Sprinkle warm peaches with mint and wrap each quarter with a strip of prosciutto. Drizzle with balsamic vinegar and season with freshly ground black pepper.
