Preparation:

    Step 1
  • Preheat oven to 220°C.
  • Step 2
  • Trim the tough stems from the figs and cut each fruit in half lengthwise. Carefully scoop out some of the pulp and fill with cheese. Using a small, sharp knife, cut the prosciutto in half lengthwise to create strips about 2.5 cm wide. Wrap a strip of prosciutto around the center of each fig half, overlapping the ends. Secure with a sprig of rosemary. Brush with olive oil and arrange cut-side up on a baking sheet.
  • Step 3
  • Roast the figs for 10 minutes, until the prosciutto is slightly crisp and the figs are heated through. Discard the rosemary. Sprinkle the figs with fresh rosemary leaves and drizzle with honey. Serve warm, garnished with lemon zest.
