While high-heat oven roasting may remain the gold standard for cooking most vegetables, some benefit from steaming for a few minutes longer than you might think necessary. Slightly overcooked broccoli develops a soft, almost creamy texture, especially after basting it with butter. Add it to breakfast dishes.

Ingredients:

  • 1 bunch broccoli (about 450 g), trimmed and cut into large florets
  • 2 tablespoons unsalted butter
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Place the steamer basket in a 3-quart saucepan. Add enough water to come to the bottom of the basket. Bring the water to a boil. Place the broccoli florets in the basket, cover, and steam until the broccoli is tender but still holds its shape, about 15 minutes.

  • Transfer the broccoli to a large bowl. Add the butter and toss gently, then season with salt and pepper to taste.
