Chopped pecans, added to the dough along with the flour, impart a rich, nutty flavor to the cookies. The dough serves both as the cookie base and as a topping, covering, but not completely enclosing, the luscious peach filling. Make it with fresh peaches for a fruitier, more concentrated flavor than store-bought jam.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 220g butter, chopped and softened, plus extra for greasing the pan
  • 4 peaches, peeled and sliced
  • 1/4 cup water
  • 1/4 tbsp. golden syrup (such as Lyle's)
  • 2 cups premium flour
  • 1 cup finely ground pecans
  • 1 cup powdered sugar
  • 1 teaspoon baking powder
  • 0.5 tsp salt

Cooking the dish according to the recipe:


  1. Preheat oven to 175°C. Line a 22x32 cm baking sheet with foil and grease the foil with oil.
  2. Simmer the peaches with the water and golden syrup in a saucepan until the mixture thickens like jam, mashing the peaches as needed, about 12 minutes.

  3. Combine flour, pecans, powdered sugar, baking powder, and salt in a bowl. Stir in the butter pieces until moist lumps form.
  4. Spread two-thirds of the dough into the baking pan and press into an even layer. Top with the peach filling and sprinkle with the remaining dough. Bake at 350°F (175°C) until golden brown, 40-45 minutes. Cool completely in the pan, then remove by pulling the foil tabs. Cut the cookies into bars.
