Boiled macaroni (preferably small, like horns) is mixed with grated cheddar, Parmesan, milk, sour cream, butter, and a little flour to thicken the sauce, then baked in the oven. Sprinkle the top with an additional portion of the grated cheese mixture and grill for 2 minutes before the end of cooking. Cook 1 1/2 cups pasta according to package directions; drain and return to pot. Stir in 2 cups grated Cheddar, 1 cup milk, 1/3 cup each grated Parmesan and sour cream, 2 tablespoons (30 g) butter, 1 tablespoon flour, and 1/2 teaspoon each Dijon mustard, hot sauce, and coarse salt. Transfer to a greased 1 1/2-quart (1 1/2-liter) baking dish; top with Cheddar and Parmesan. Bake at 400°F (200°C) for 15 minutes. Then broil until golden, 2 minutes.
