For a family holiday or a gathering, prepare these healthy banana treats that are as delicious and elegant as cakes. Very sweet, overripe bananas are cut into bite-sized pieces and coated with a glaze of dark chocolate mixed with vegetable shortening. Each piece is then sprinkled with crushed peanuts (or other nuts) and garnished with a maraschino cherry. After the glaze has set, serve them beautifully arranged on a tray. This fruity dessert is quick to prepare and looks charming – indistinguishable from real petit fours.

To make a batch, peel 2 overripe bananas and freeze until firm, about 1 hour. Melt 4 ounces chopped dark chocolate with 1 tablespoon shortening or coconut oil in the microwave. Slice the bananas and toss them in the melted chocolate; stir to coat completely, then remove with a fork. Transfer to a plate and immediately sprinkle with finely chopped peanuts, top each piece with a maraschino cherry, and freeze for another 30 minutes.
