If you want to surprise your guests with an unusual appetizer, bake marrow bones in the oven. Marrow bones can be found at butchers. These are the bones from a veal leg, which are trimmed of meat, cut into small pieces (it's best to ask the butcher to do this), baked vertically, and served in this form with a small spoon to easily scoop out the marrow. This transforms inexpensive bones, usually reserved for broths, into a sophisticated delicacy. They are traditionally served with toast to spread the marrow on, a bowl of coarse salt, and a light green salad. The appetizer is not only delicious but also very healthy.

Place them upright on a foil-lined baking sheet and bake at 230°C for 15 minutes. Scoop out the marrow with a spoon, spread it on the toast, and sprinkle with sea salt.
