Halve 2 crisp apples. Scoop out the core with a spoon and chop most of it. Toss with 1/2 cup shredded cheddar and 1/2 cup cornbread crumbs, 1/4 cup chopped celery and green onions, 2 tablespoons olive oil, and 1 teaspoon chopped thyme. Season with salt and pepper. Fill the apples. stuffing; place in a baking dish. Pour 1/2 cup apple cider into the dish. Cover with foil and bake at 400°F (250°C) until set, 20 to 25 minutes. Remove the foil and bake until crisp, 10 minutes.
