Try Sunny Anderson's baked apple crisp for an alternative to a traditional casserole. Instead of cutting the apples into pieces, she suggests simply halving the fruit and baking them individually, filling them with a cinnamon-brown sugar filling.


Ingredients:

  • 2 apples (better Fuji varieties or Macintosh)
  • 1 teaspoon lemon juice
  • 1/4 cup strawberry jam, preserves, or confiture
  • 2 tbsp. premium wheat flour
  • 3 tbsp chilled and diced butter
  • 3 tbsp. l. brown sugar
  • 1/2 cup rolled oats
  • 1/4 tsp ground cinnamon
  • A pinch of salt
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 180C.
  • Step 2
  • Cut each apple in half crosswise. Using a noisette, scoop out the core from each side to create a rounded indentation. Rub the apple cut side with lemon juice. Place 1 tablespoon of jam in each indentation.
  • Step 3
  • For sprinkling: In a small bowl, combine the flour, butter, brown sugar, oats, cinnamon, and salt. Spoon the mixture over the jam on each apple and press it down. Place in a baking dish, adding 0.5 cm of water. Bake for 35-40 minutes, until golden brown and the apples are tender.
