A sweet snack made from apple fries can be just as addictive as French fries. Kids will especially love this delicacy, so make plenty! Genny Smith apples are sliced ​​like potatoes, deep-fried or fried in a pan filled with oil until crispy and golden, then immediately rolled in a fragrant mixture of sugar and cinnamon. These apple fries have a flavor reminiscent of apple pie and are recommended served with vanilla whipped cream for dipping.


Ingredients:

  • 4 Granny Smith apples, peeled
  • Vegetable oil, for deep-frying
  • 0.5 cup cornstarch
  • 0.5 cup + 2 tablespoons sugar
  • 1 teaspoon ground cinnamon
  • 2/3 cup heavy cream
  • 1 tsp vanilla extract
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In a large, wide saucepan, heat 4 cm of vegetable oil over medium heat until it reaches 150°C (300°F) on a deep-fry thermometer. Cut the apples into 1 cm-wide sticks, like French fries.
  • Step 2
  • Working in batches, toss the apples with cornstarch until well coated. Shake off any excess. Fry in hot oil until soft but still light in color, about 2 minutes. Remove with a slotted spoon and transfer in a single layer to a wire rack set over a rimmed baking sheet; let cool. Before frying the next batch, return the oil to 150°C.
  • Step 3
  • In a shallow bowl, combine 1/2 cup sugar and cinnamon. In a medium bowl, combine the cream, vanilla, and the remaining 2 tablespoons sugar. Beat with a mixer until medium peaks form.
  • Step 4
  • Heat the oil to about 190°C (375°F). Working in three batches, fry the apples again until crisp and lightly browned, about 1.5 minutes. Transfer to paper towels to drain, then toss with sugar and cinnamon to coat all the slices well. Serve the apples warm with whipped cream for dipping.
