This basic cornbread is simple, with just the essential ingredients that give it that unforgettable flavor: a mixture of corn and wheat flour, butter, sour milk, a touch of sugar to bring out the corn's natural sweetness, eggs, milk, and baking powder. Traditionally baked in a cast-iron skillet, the cornbread is slightly sweet, with a pleasant creamy flavor, and pairs perfectly with savory main dishes, as well as for breakfast, perhaps with jam or honey.

Ingredients for the recipe:
- 7 tablespoons unsalted butter, melted, plus extra for greasing the pan
- 1 cup yellow cornmeal
- 1 cup premium flour
- 1/4 cup sugar
- 2 tsp baking powder
- 1.5 tsp coarse salt
- 0.5 tsp of soda
- 2 large eggs
- 1 cup of sour milk or kefir
- 1/4 cup milk

Cooking the dish according to the recipe:
- Preheat oven to 190°C. Grease a 22cm cast iron or other oven-safe skillet with butter.
- In a large bowl, combine the cornflour, wheat flour, sugar, baking powder, salt, and baking soda. In a separate large bowl, whisk together the eggs, buttermilk, milk, and melted butter until smooth.
- Combine the flour mixture with the liquid mixture and pour the batter into the prepared pan; smooth the surface.
- Bake until golden brown and a toothpick inserted into the center comes out clean, 25 to 30 minutes.
