If you want to add the flavor and aroma of Latin American cuisine to any dish, the easiest way is to make sofrito. This is a stir-fry, a vegetable base whose ingredients vary slightly across Latin America, but the basic version includes onions, tomatoes, green onions, and cilantro. Sofrito can be served as a sauce or a condiment. Try adding it to simple scrambled eggs and see how your breakfast is transformed.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 2 tbsp. l. olive oil
  • 12 green onions, finely chopped, white and light green parts only
  • 1 small yellow onion, finely chopped
  • 1 large tomato, finely chopped (remove core)
  • 0.5 cup chopped cilantro leaves

Cooking the dish according to the recipe:


  1. Heat oil in a medium skillet over medium heat. Add green onions, onions, and tomatoes.
  2. Cook, stirring, until the onions are soft and golden and the tomatoes are tender, about 10 minutes. Add the cilantro; season with salt and pepper. Serve the sofrito warm or let it cool to room temperature.
