Sauteed zucchini is a wonderful summer side dish for any meat dish. It's incredibly healthy and juicy, and a few extra ingredients enhance the zucchini's mild flavor. Saute the zucchini in butter, adding a little olive oil to prevent it from burning, along with a little red pepper flakes. Finally, stir in fresh parsley and green onions for a more sweet and spicy flavor.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 2 medium yellow zucchini, thinly sliced
  • Half a red bell pepper, chopped
  • 1 tbsp extra-virgin olive oil
  • 2 tablespoons butter
  • 2 tbsp chopped parsley leaves
  • 2 tbsp chopped chives or 2 green onions, optional

Cooking the dish according to the recipe:


  1. Heat a frying pan over medium heat. Add olive oil, then butter. Once the butter has melted, add the bell pepper and zucchini. Sauté for 12-14 minutes, until the zucchini is tender. Season with salt, black pepper, and parsley. Add green onions if you prefer more flavor.
