In a baking dish, toss 1 large acorn squash (cut into wedges) with 3 tablespoons melted butter, 3 tablespoons balsamic vinegar, 2 sliced shallots, 6 chopped sage leaves, 1 tablespoon honey, a pinch of ground coriander, salt and pepper.
Add 0.5 cups of water and bake at 230°C for 20 minutes. Turn over, sprinkle with 1/4 cup of hazelnuts, and bake for another 20 minutes.
