This amazing, vitamin-rich salad harmoniously blends sweet and tart kiwi, refreshing mint, juicy lettuce, and a zesty dressing of lime juice, fish sauce, and piquant sambal oelek. If you prefer more contrasting flavors, choose very ripe, sweet kiwi. Either way, it's delicious and summer-fresh. Serve as a standalone appetizer or as a side dish with grilled meat.

In a bowl, combine 3 tablespoons lime juice, 2 tablespoons water, 1 tablespoon sugar, 2 teaspoons fish sauce, and 1 teaspoon sambal oelek. Refrigerate until chilled. Toss with 4 peeled and diced kiwis, 1 cup bean sprouts, 1/4 thinly sliced red onion, 1/2 cup fresh mint, and season with salt. Serve with 4 cups of small-leaf lettuce. Top with the kiwi mixture.
