Cut jalapeños in half lengthwise, and you've got the perfect base for a savory appetizer. The pepper halves are baked until tender, then filled with a filling of Italian sausage, sautéed with onions and bell peppers, and mixed with mascarpone cheese and Parmesan. Each stuffed pepper is topped with mozzarella and baked in the oven until the cheese melts. After baking, the jalapeño's spicy flavor mellows slightly, further softened by the creamy cheese filling. This appetizer is perfect for house parties or watching the game with a glass of beer.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 15 jalapeños, preferably red, cut in half lengthwise, seeds and membranes removed
  • 1 tbsp. l. rapeseed oil
  • 0.9 kg raw Italian sausage, casings removed
  • 1/4 cup chopped red onion
  • 1/4 cup crushed red bell pepper
  • 3 tablespoons of crushed garlic
  • 2 cups mascarpone or cream cheese
  • 1/4 cup grated Parmesan cheese, plus extra for serving
  • 0.5 tbsp. grated mozzarella

Cooking the dish according to the recipe:


  1. Preheat oven to 175°C and position the rack on the middle shelf of the oven.
  2. Place the jalapeños on a baking sheet and roast for 10 minutes. Remove from the oven and let cool. Turn on the grill.

  3. Heat vegetable oil in a medium skillet. Add the sausage and cook for 5-7 minutes. Add the onion, pepper, and garlic and cook until softened, about 5 minutes. Transfer to a large bowl. Cool to room temperature, then stir in the mascarpone and Parmesan. Mix thoroughly and season with salt and pepper to taste.
  4. Spoon about 1 tablespoon of the filling into each jalapeño half and sprinkle with 1/2 teaspoon of mozzarella.
  5. Place the baking sheet with stuffed peppers in the oven and grill until the mozzarella is melted.
