Frozen artichoke hearts are simmered for a few minutes in a small amount of water and white wine with onions, garlic, and tomatoes until tender and the flavors meld. In a frying pan with 1 tablespoon of olive oil, sauté half a finely chopped onion, 2 finely chopped garlic cloves, and a pinch of salt for 5 minutes. Pour in 0.5 cups of white wine and reduce by half. Add 2 chopped tomatoes, two 250g packages of frozen artichoke hearts, 3 tablespoons of water, 1 strip of lemon zest, and 0.5 teaspoon of salt. Simmer, covered, for 6 minutes. Add chopped olives, basil, salt, and black pepper to taste.
