If you really want to enjoy healthy spinach, make a casserole with it. This casserole features a creamy, cheesy sauce that literally drowns in a generous amount of juicy spinach, topped with a deliciously crispy crust of breadcrumbs and Parmesan. Nutmeg and a pinch of cayenne pepper add a piquant flavor to the creamy taste, and for an extra-crisp crust, use Japanese panko breadcrumbs for the topping; they're coarse and airy. It's incredibly delicious and quick to prepare.

The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:

  • 2 x 280g packages frozen chopped spinach, thawed and squeezed out
  • 3 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 and 1/4 cups heavy cream
  • 1/4 teaspoon freshly grated nutmeg
  • 1/8 tsp cayenne pepper

  • 60 g of cream cheese

Cooking the dish according to the recipe:

  1. Preheat oven to 200°C.
  2. In a medium saucepan, melt the butter over medium heat. Add the garlic and onion and cook, stirring occasionally, until softened, about 6 minutes. Add the heavy cream, nutmeg, and cayenne pepper and bring to a simmer. Simmer, stirring occasionally, until the sauce thickens slightly, about 5 minutes.

  3. Stir in the spinach, 1/2 teaspoon salt, and 1/4 cup Parmesan. Add the cream cheese and stir until completely melted. Season with salt and pepper to taste.
  4. Transfer the mixture into a 1.5-2 liter baking dish and sprinkle with breadcrumbs and the remaining 1/4 cup Parmesan. Bake until golden brown, about 15 minutes.
