A healthy and delicious spinach and turkey casserole that will keep you full for a long time. It has everything you need for a hearty breakfast: meat, greens, eggs, cheese, and bread. Start preparing the casserole the night before. Brown the ground turkey used to stuff the sausages. Mix it with spinach, eggs, milk, bread crumbs, and grated cheese, and refrigerate overnight to marinate. In the morning, all you have to do is pop the casserole dish in the oven and wait for a delicious breakfast. If desired, you can freeze the prepared casserole and reheat it in the oven without defrosting.

Ingredients:

  • 220 g raw hot or sweet turkey sausages, remove casings, crumble the mince
  • 2 green onions, chopped
  • 6 large eggs + whites of 6 large eggs
  • 1 and 3/4 cups 1% milk
  • 1 package (250g) frozen chopped spinach, thawed and squeezed out of excess water
  • 3/4 cup grated cheddar
  • 0.5 tbsp. grated parmesan
  • Half a whole grain baguette, cut into 2cm cubes (about 4 cups)
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Heat a large nonstick skillet over medium heat. Add the ground turkey and shallots and cook, stirring and breaking up any large pieces with a spoon, until the ground turkey is browned and cooked through, about 10 minutes. Remove from heat and let cool slightly.
  • Step 2
  • In a large bowl, whisk together the eggs, egg whites, milk, and 1/2 teaspoon each of salt and black pepper. Add the ground turkey, spinach, both cheeses, and bread and stir to distribute the ingredients evenly.
  • Step 3
  • Spray a 3-quart casserole with cooking spray. Spread the egg mixture evenly into the pan. Cover and refrigerate for at least 6 hours, or preferably overnight.
  • Step 4
  • Preheat oven to 350°F (175°C). When you wake up, remove the dish and bake, uncovered, until lightly browned on top, about 30 minutes. You can freeze the finished casserole for up to 2 weeks. Before serving, cover with foil and reheat at 350°F (175°C) for 35-45 minutes..
