Ptitim, also known as Israeli couscous, is perfect for quick and delicious Middle Eastern-style side dishes. It cooks quickly, but to ensure it stays crisp and acquires a delicious golden color, fry it in olive oil first. Season the finished side dish with lemon juice, olive oil, and Dijon mustard, then sprinkle with chopped pistachios, shaved Parmesan, and chopped mint, which, along with the lemon, adds a refreshing flavor. This side dish pairs perfectly with grilled meats, especially lamb.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 1.5 cups of ptitim
  • 0.5 tsp lemon zest
  • 1/4 cup olive oil

Cooking the dish according to the recipe:


  1. In a saucepan, stir-fry 1.5 cups of ptitim in olive oil for 3 minutes. Add 3 cups of water and bring to a boil; cook until al dente, 7 minutes, then drain.
  2. Combine 3 tablespoons lemon juice, 1 teaspoon Dijon mustard, 1/2 teaspoon lemon zest, and 1/4 cup olive oil; season with salt and pepper to taste. Stir in the ptitim, sprinkle with chopped pistachios, shaved Parmesan, and torn mint.
