Divinity is a popular American nougat dessert made with nuts. It's made by adding hot sugar syrup to whipped egg whites. Humidity plays a key role in making the dessert: the lower the humidity, the better the nougat will set. Also, be sure to have a candy thermometer handy to ensure the syrup is heated to the right temperature. This Divinity recipe uses two types of nuts—hazelnuts and pecans—for a richer flavor. Be sure to oil your hands thoroughly while working with the nougat, as it will be very sticky, but the results are worth it—it's not for nothing that "Divinity" translates as "divinity."



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 4 cups granulated sugar
  • 1 cup light corn syrup
  • 3 egg whites
  • 2 tbsp. hazelnuts or pecans

Cooking the dish according to the recipe:


  1. Combine 4 cups granulated sugar, 1 cup light corn syrup, and 3/4 cup water in a saucepan, then heat over medium heat, without stirring, until the mixture reaches 120°C (250°F) on a candy thermometer.
  2. Beat 3 egg whites until stiff peaks form; drizzle the hot syrup over the whites and beat until stiff peaks form. Add 1 teaspoon vanilla extract and 2 cups chopped hazelnuts.

  3. Using buttered hands, form the mixture into small balls, then roll in chopped nuts and let cool.
