Add a bunch of Swiss chard (about 200g) to the heated pan with the fried bacon, allowing the beet leaves to wilt slightly. Sprinkle with dates and walnuts.

Rinse the fat from 4 slices of thinly sliced bacon. Remove the bacon with tongs and add 1/4 cup each of apple cider vinegar and chopped dates to the pan, stirring gently with a spatula until heated through. Add 1 small bunch of chopped Swiss chard, the bacon, and 1/4 cup toasted and chopped walnuts. Season with salt and ground black pepper and toss to combine.
