When making this healthy side dish, use the stems along with the rainbow chard leaves, as they add even more fiber and texture. Chop the leaves and stems of 2 bunches rainbow chard; keep the leaves separate from the stems. In a large saucepan over medium-high heat, heat 2 tablespoons dark sesame oil and 4 sliced garlic cloves; cook until golden. Add the chard stems and 1 sliced shallot; cook until softened, about 4 minutes. Add the chard leaves and 3/4 teaspoon coarse salt; cook until softened, about 3 minutes. Sprinkle with toasted sesame seeds.
