Cooking the dish according to the recipe:
- Preheat oven to 180°C.
Cut the plantains in half, peel and cut into 4 cm pieces.
Place the plantains in the hot oil and fry until golden brown, about 2-3 minutes. Be careful not to overcook them; they should still be raw in the center. Season lightly with salt.Culinary advice: Check for doneness with a toothpick: the center of the plantains should still be starchy and cool. If you don't have a press, you can place the plantains in a baking dish and press them down with your fingers. You can serve seafood in these deep-fried pho cups. - Place the fried plantains in a press. They should form into cup-shaped shapes.
Place the plantain cups in the deep fryer and fry again until golden brown and cooked through, about 2-3 minutes. Transfer to a paper towel-lined tray to absorb excess oil. Season with salt.
