Tostones appetizer (Antilles dish) - detailed recipe.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • Oil for frying
  • 3 plantains
  • Salt
  • Additional equipment: Wooden plantain press

Cooking the dish according to the recipe:


  1. Preheat oven to 180°C.

    Cut the plantains in half, peel and cut into 4 cm pieces.

    Place the plantains in the hot oil and fry until golden brown, about 2-3 minutes. Be careful not to overcook them; they should still be raw in the center. Season lightly with salt.

    Culinary advice: Check for doneness with a toothpick: the center of the plantains should still be starchy and cool. If you don't have a press, you can place the plantains in a baking dish and press them down with your fingers. You can serve seafood in these deep-fried pho cups.
  2. Place the fried plantains in a press. They should form into cup-shaped shapes.

    Place the plantain cups in the deep fryer and fry again until golden brown and cooked through, about 2-3 minutes. Transfer to a paper towel-lined tray to absorb excess oil. Season with salt.
