A simple yet unique baked potato casserole made with baked sweet potatoes and honey-scented bananas, whipped into a delicate, airy mousse. Topped with brown sugar and pecans, this dish boasts excellent flavor and presentation, making it a perfect side dish for any holiday meal.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 5 tubers sweet potatoes medium size, well washed
  • 4 bananas, unpeeled
  • 250 g of butter at room temperature
  • 1/4 cup honey
  • 1/2 cup flour
  • 3/4 cup brown sugar
  • 1.5 cups chopped pecans

Cooking the dish according to the recipe:


  1. Preheat oven to 190°C.
  2. Prick the sweet potatoes all over with a fork, place them in a roasting pan, and roast for 30 minutes. Add the bananas to the roasting pan and continue roasting for 10-15 minutes, until the bananas and potatoes are very soft. Remove the roasting pan from the oven, but leave the oven running.

  3. When the potatoes are cool enough to handle, scrape the flesh into a large mixing bowl. Peel the bananas and add them to the bowl along with 110g of butter and honey. Season with salt and beat vigorously with a wooden spoon until the ingredients are combined and the mixture is fluffy. Spoon into a heatproof serving dish and smooth the surface.
  4. In a separate bowl, use your fingers to crush the remaining 4 oz (110 g) butter, brown sugar, flour, and pecans until they form coarse crumbs. Sprinkle the streusel over the mashed potatoes and return them to the oven.
  5. Bake for about 20 minutes, until the nut topping is golden brown. Serve the sweet potato casserole hot.
