Ingredients:

  • 300 g of leftover mashed potatoes
  • 2 cups buttermilk
  • 2 tsp baking soda (for buttermilk)
  • 1/4 - 1/2 cup fresh lemon juice
  • 1/2 - 2/3 cup sugar
  • 1/3 - 1/2 cup corn syrup
  • 3 beaten eggs
  • 2.5 teaspoons of salt
  • Wheat flour
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Mix the ingredients as listed, then add the wheat flour until you have a thick dough. Using a rolling pin, roll it into a circle 20 cm in diameter and 0.3–0.5 cm thick.

    Place the circles one at a time in a lefse pan or a regular heavy skillet and cook the pancakes for 3 minutes on each side until cooked through.
