Ingredients:

  • 4 slices bacon, chopped
  • 3 plum tomatoes, cut into slices
  • Olive oil, for greasing
  • 450 g of ready-made yeast pizza dough, at room temperature
  • 180 g goat cheese, crumbled
  • Coarse salt and freshly ground pepper
  • 1.5 cups radish sprouts
  • 3 cups young arugula
  • Juice of 1/2 lemon
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 250°C. In a large skillet, fry the bacon over medium heat until crisp, about 10 minutes. Drain on paper towels. Add the tomatoes to the same skillet with the fat and fry on both sides for 2 minutes.
  • Step 2
  • Grease a large baking sheet with olive oil. Place the dough on the sheet and spread it out evenly (if the dough shrinks, let it rest at room temperature for a few minutes). Prick the dough with a fork all over the surface. Top with tomatoes and drizzle with the rendered bacon fat, reserving 1/2 tablespoon of the fat for the salad. Bake until golden brown, 12 to 15 minutes.
  • Step 3
  • Remove the tortilla from the oven and sprinkle with goat cheese. Season with salt and pepper. In a bowl, combine the radish sprouts, arugula, lemon juice, and remaining rendered fat (reheat if necessary). Season with salt and pepper. Spoon the salad onto the tortilla and sprinkle with bacon.
