Bacon and Onion Pesto Flatbread

Thanks to ready-made pizza dough, Alex Guarnaschelli's flatbread recipe is incredibly quick to make. She bakes the dough, then tops it with sour cream and lemon zest, bacon bits, and a delicious green onion-caper pesto sauce.
Ingredients:
- 450 g frozen yeast pizza dough (defrosted)
- 4 thick strips of bacon, thinly sliced
- A pinch of sugar
- Coarse salt and freshly ground white pepper
- 1 large white onion, thinly sliced
- 6 thinly sliced green onions
- 1 teaspoon capers
- 1/2 cup fresh parsley
- Grated zest of 1/2 lemon
- 1/4 cup extra-virgin olive oil
- 1/3 cup sour cream
- Premium wheat flour, for dusting
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.

Preparation:
- Step 1
- Preheat oven to 230°C.
Fry the bacon in a large skillet over medium heat, stirring occasionally, until golden and crisp. Transfer to paper towels and pat dry; keep warm.
Add the chopped onion to the remaining fat in the pan, sprinkle with sugar, salt, and pepper. Fry until lightly browned and softened, 5-7 minutes. Taste to ensure the seasoning is sufficient.
Step 2 - Combine the onion, capers, and parsley in a food processor. Add salt, pepper, and half the lemon zest to taste.
Pulse until the ingredients are combined. Turn on the processor and slowly pour in the olive oil through the lid. Transfer the onion pesto to a bowl.
Step 3 - In a small bowl, whisk the sour cream and remaining lemon zest until smooth. Season with salt and pepper. Step 4
- Roll out the pizza dough into a 20x35cm rectangle on a lightly floured surface.
Roll the dough onto a rolling pin and transfer it to a parchment-lined baking sheet. Place in the center of the oven and bake for 10-12 minutes, until golden brown.
Step 5 - Spread the sour cream mixture on the flatbread. Remove the onions and bacon grease from the pan and sprinkle with bacon. Chop and drizzle with onion pesto.
