A single flatbread holds a whole breakfast of scrambled eggs, tomatoes, bacon, and cheese, just like a plate, and it's easy to eat with your hands, like a pizza. It looks absolutely delicious. You can use any flatbread, such as Indian naan or Greek pita. First, top the heated flatbread with fried tomatoes, onions, and cheese, then bake in the oven until the cheese melts, then top with scrambled eggs and crispy bacon. Start with the bacon so that the rendered, aromatic fat can be used to fry the other ingredients. Serve with a juicy green salad.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 4 naan breads or pita bread without cavities
  • 6 slices of bacon
  • 1 small onion, thinly sliced
  • 3 small or 2 large tomatoes, chopped
  • Hot sauce, to taste
  • 8 slices of cheese
  • 4 large eggs
  • 5 cups mixed small salad greens
  • 1 tbsp. white wine vinegar

Cooking the dish according to the recipe:


  1. Preheat oven to 200°C. Place the tortillas on two foil-lined baking sheets and bake until crisp, about 10 minutes.
  2. Meanwhile, in a large nonstick skillet over medium heat, cook the bacon, turning occasionally, until crisp, 8-10 minutes. Transfer to paper towels to drain, then crumble. Discard 1 tablespoon of the rendered egg fat from the skillet.

  3. Add the onion to the remaining fat in the skillet and increase the heat to medium-high. Season with salt and pepper and cook, stirring, until the onion is browned and softened, 5 minutes. Add the tomatoes and cook until most of the liquid has evaporated, 3-5 minutes. Season with salt, pepper, and drizzle with hot sauce to taste.
  4. Spread the onion-tomato mixture on the flatbreads and top with 2 slices of cheese. Return to the oven and bake until the cheese is melted, 3-5 minutes.
  5. Meanwhile, in an empty skillet, heat the reserved bacon drippings over medium heat and beat in the eggs. Season with salt and pepper to taste and cook until the whites are set, about 3 minutes.
  6. Top each tortilla with a fried egg and sprinkle with bacon. Toss the salad greens with vinegar and season with salt and pepper to taste. Serve the tortillas with salad and hot sauce.
