Cooking the dish according to the recipe:
- Mix ketchup with chipotle and spread on one side of each slice of bread. Place the cheese between the bread slices at an angle, allowing the edges to hang over the sides. Spread half of the butter on the outside of one slice of bread. Heat a skillet over medium heat.
- Place the sandwich butter-side down in the pan and press down until the bread is golden brown and the cheese begins to melt. Brush the other side (the one facing up) with the remaining butter and flip. Cook until golden brown and the cheese is melty. This should take 3-4 minutes. Remove the sandwich from the pan.
- Meanwhile, cook the bacon in a skillet over medium heat until just beginning to crisp, about 5 minutes. Flip the bacon over, placing two pieces side by side to form a square. Crack an egg on top. Continue cooking until the egg is set, about 5 minutes. Open the sandwich (use a spoon to help) and insert the bacon and egg mixture. Close the sandwich, cut, and enjoy.
