Creamy spinach and flavorful flank steak complement each other perfectly in this hearty, thick-bodied egg sandwich. Serve with these fried onion rings, just as delicious as the restaurant's. The batter is made with soda water, making them fluffy and crispy.

Ingredients:


Creamed spinach
  • 900 g of small spinach
  • 110 g unsalted butter
  • 0.5 cups diced Spanish onion
  • 2 tablespoons of crushed garlic
  • 0.5 cups flour
  • 2 cups of milk
  • 1 cup heavy cream
  • 1/8 tsp. grated nutmeg
  • 1/8 tsp cayenne pepper

Onion rings
  • 2 large Spanish onions, sliced ​​into 1cm thick rings.
  • 1 cup flour
  • 2 tsp Old Bay seasoning
  • 1.5 tsp baking powder
  • 1 cup of sparkling water
  • Vegetable oil, for deep frying

Steak
  • 1 skirt steak, weighing 450 g, cut into 4 pieces
  • 1 teaspoon coarse salt
  • 1 teaspoon ground black pepper
  • 2 tablespoons of vegetable oil
  • 4 Kaiser rolls, halved, buttered and toasted
  • 4 fried eggs
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Creamed spinach:

    Place some ice and cold water in a bowl. Bring a saucepan of salted water to a boil. Add the spinach, cook for 2 minutes, and then transfer to the ice water to stop the cooking. Drain the spinach in a colander and then squeeze it out with your hands.
  • Step 2
  • In a medium saucepan over medium heat, melt the butter. Add the onion, garlic, and 1/4 teaspoon salt and sauté, stirring frequently, until the onion is softened but not browned, about 6 minutes. Add the flour and stir. Cook, stirring constantly to prevent the onion from burning, for 3 minutes.
  • Step 3
  • Stir in the milk and cook until no lumps remain. Reduce the heat to maintain a gentle simmer and cook the sauce for 3 minutes. Stir in the cream, bring to a boil, and add the spinach. Add the nutmeg, cayenne pepper, and 2 teaspoons of salt. Cook for another 2 minutes and season with salt to taste. Keep warm.
  • Step 4
  • In a large, wide, heavy-bottomed saucepan, heat about 7 cm of vegetable oil over medium heat until it reaches 190°C on a deep-fry thermometer.
  • Step 5
  • Onion rings:

    In a medium bowl, combine the flour, Old Bay seasoning, and baking powder. Slowly add the sparkling water and mix until smooth. Dip each onion ring in the batter to coat evenly and fry until golden brown and crisp, about 2 minutes. Drain the rings on paper towels and immediately season with salt.
  • Step 6
  • Steak:

    Place a large skillet over high heat. Heat until smoking. Pat the steak dry with paper towels. Season both sides with salt and black pepper. Add a little oil to the hot skillet and carefully add the steak. Cook the steak without moving it for 4 minutes, then flip and cook for another 4 minutes until medium-rare. Let the steak rest for 3 minutes before slicing.
  • Step 7
  • Sandwiches:

    Spread 1/4 cup warm creamed spinach on the bottom halves of the buns. Cut each steak in half or into desired size pieces and arrange them on top of the spinach. Top with a fried egg and top with the bun tops. Serve with onion rings.
