Ingredients:
- 4 medium tomatoes, halved
- Salt and freshly ground pepper
- 4 buns, cut in half
- 2.5 tbsp. l. olive oil
- 1 shallot or 1/4 red onion, thinly sliced into half rings
- 120 g bacon, cut into thin strips
- 8 cups (230 g) baby spinach
- 4 large eggs
- 1/3 tbsp. coarsely grated mature cheese Cheddar

- Step 1
- Preheat the roasting pan. Season the tomatoes with salt and pepper. Place the tomatoes, flat side down, in the roasting pan. Roast until the tomatoes begin to soften, about 2 minutes, then remove from the roasting pan to a serving platter. Spread. buns olive oil and fry in a frying pan, transfer to a plate. Step 2
- Heat 1 tablespoon olive oil in a skillet over medium heat. Add the shallots and cook, stirring, until softened, about 2 minutes. Add the bacon and cook, stirring, until golden brown, about 3 minutes. Stir in the spinach and cook until wilted, season with salt and pepper. Transfer the vegetables and bacon to a bowl. Step 3
- Heat 1/2 tablespoon olive oil in the same skillet over medium-high heat. Crack the eggs into the skillet, season with salt and pepper, and cook until the whites are set but the yolks are still runny, about 5 minutes. Remove the skillet from the heat. Step 4
- Sprinkle the tomatoes with cheese. Return the tomatoes and buns to the broiler and broil until the cheese is melted, 2 to 3 minutes. Arrange the buns on plates, top with spinach and bacon, then top with a fried egg. Serve the sandwiches with fried tomatoes.
