This hearty burrito is filled with juicy slices of beef steak, caramelized onions, a fried egg, and cheese. Perfect for brunch or a hearty snack, pan-fry the finished burrito to melt the cheese, then enjoy with a spicy sour cream sauce.

Ingredients:

  • 1 cup sour cream
  • 2 tablespoons hot sauce, such as Tabasco
  • 2 tablespoons butter
  • 1 medium onion, thinly sliced
  • 2 New York steaks, 220g each.

Preparation:

    Step 1
  • Combine the sour cream and hot sauce and set aside. Melt the butter in a large skillet over medium heat. Add the onion and cook, stirring occasionally, until well caramelized, 20 minutes. Season with salt and pepper and set aside.
  • Step 2
  • Heat a large cast-iron grill pan over medium heat. Generously season the steaks with salt and pepper. Grill for 5-6 minutes on each side. Let the meat rest for 10 minutes.
  • Step 3
  • While the steaks are frying, beat the eggs with a couple of pinches of salt and black pepper. Fry in a frying pan, stirring, until scrambled. Set aside.
  • Step 4
  • Thinly slice the steaks, trimming any large pieces of fat. Sprinkle a layer of Gruyere on a tortilla, then top with the sliced ​​steak, a fried egg, and some caramelized onions.
