Ingredients:
- 1 cup sour cream
- 2 tablespoons hot sauce, such as Tabasco
- 2 tablespoons butter
- 1 medium onion, thinly sliced
- 2 New York steaks, 220g each.
- 6 large eggs
- 4 tortillas with sun-dried tomatoes, 30 cm in diameter.
- 1 cup grated Gruyere
- Vegetable oil for greasing

Preparation:
- Step 1
- Combine the sour cream and hot sauce and set aside. Melt the butter in a large skillet over medium heat. Add the onion and cook, stirring occasionally, until well caramelized, 20 minutes. Season with salt and pepper and set aside. Step 2
- Heat a large cast-iron grill pan over medium heat. Generously season the steaks with salt and pepper. Grill for 5-6 minutes on each side. Let the meat rest for 10 minutes. Step 3
- While the steaks are frying, beat the eggs with a couple of pinches of salt and black pepper. Fry in a frying pan, stirring, until scrambled. Set aside. Step 4
- Thinly slice the steaks, trimming any large pieces of fat. Sprinkle a layer of Gruyere on a tortilla, then top with the sliced steak, a fried egg, and some caramelized onions. Roll up, brush the burrito with a little oil, and pan-fry for 2-3 minutes per side. Serve with a side of spicy sour cream.
