In her simplified and more filling version of Eggs Benedict, Ree Drummond substitutes fried steak for bacon, uses fried eggs instead of poached eggs, and makes the hollandaise sauce in no time, without boiling, in a blender—it couldn't be simpler! The key is to use hot, melted butter and whisk it constantly to prevent the yolks from curdling.

Ingredients:


Hollandaise sauce
  • 3 large egg yolks
  • Juice of half a lemon + more as needed
  • 220 g (1 cup) salted butter, melted, hot
  • 1 teaspoon adobo sauce from a jar of chipotle peppers, plus more as needed

Steak with fried eggs
  • 2 beef tenderloin steaks, 350g each, approximately 5cm thick.
  • Butter, for frying
  • 4 large eggs
  • English muffins with garlic butter
  • Cayenne pepper

English muffins with garlic butter
  • 55 g salted butter
  • 1 clove garlic, finely grated
  • 2 English muffins, cut in half
  • 2 tbsp finely grated Parmesan
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Hollandaise sauce:

    Place the egg yolks and lemon juice in a blender and blend for a few seconds. With the blender running, slowly pour in the melted butter. Turn off the blender and add the adobo and a pinch of salt. Blend again and taste, adding more salt, adobo, or lemon juice if needed. Set aside and keep the sauce warm.
  • Step 2
  • Steak with fried eggs:

    Heat a large skillet over medium-high heat. Cut the steaks in half to make four 2.5cm-thick pieces. Pat dry and season with salt and black pepper. When the skillet is hot, add the steaks and cook to your desired doneness. Transfer to a plate, cover with a second plate, and keep warm.
  • Step 3
  • Wipe out the skillet, then lightly butter the bottom. Crack the eggs into the skillet individually and fry until the yolks are done to your liking. Season with salt and pepper to taste.
  • Step 4
  • Assembly:

    Place 2 English muffin halves on each plate. Top with the steak, then the scrambled eggs. Drizzle with hollandaise sauce, sprinkle with a little cayenne pepper, and serve immediately.
  • Step 5
  • English muffins with garlic butter


    Preheat oven to 175°C. Place a rack on a baking sheet.

    In a small saucepan over medium heat, melt the butter and garlic. Brush both muffin halves with the garlic butter and place them cut-side up on a wire rack. Sprinkle with Parmesan cheese. Bake until golden brown, about 10 minutes.
