Hollandaise sauce is probably the last thing you want to make when you're dealing with a hangover. This Eggs Benedict sandwich recipe takes a shortcut and replaces the traditional hollandaise with a mixture of mayonnaise and lemon juice. While you'll likely find it easier to fry a fried egg, if you're feeling adventurous, you can poach it! This recipe features the filling served on toasted buns with sautéed spinach and Canadian bacon, which can be substituted with ham.

Ingredients:

  • 2 tablespoons mayonnaise
  • 1 teaspoon lemon juice
  • 1/8 tsp cayenne pepper
  • 2 slices Canadian bacon
  • 1 large English muffin, cut in half on the side
  • 2 tbsp unsalted butter, softened
  • 0.5 cups loosely packed small spinach leaves
  • 1 tbsp. vegetable oil
  • 1 large egg
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 200°C. In a small bowl, combine mayonnaise, lemon juice, and cayenne pepper, add 1/4 teaspoon each of salt and black pepper; set aside.
  • Step 2
  • Place the Canadian bacon on a rimmed baking sheet. Generously butter both halves of the English muffin, sprinkle with salt and black pepper, and place on the baking sheet.
  • Step 3
  • Bake until the muffins are golden brown and the Canadian bacon is fragrant, about 10 minutes. Sprinkle the spinach evenly over the Canadian bacon and continue baking until the spinach is wilted and the muffins are golden brown, about 5 minutes.
  • Step 4
  • Meanwhile, heat the vegetable oil in a small skillet over medium-high heat. Crack the egg into the skillet, season with salt and pepper, and cook until the white is set and crisp around the edges but the yolk is still runny, 2-3 minutes.
  • Step 5
  • Place 1 slice of Canadian spinach bacon on 1 English muffin half, top with a fried egg, drizzle with mayonnaise sauce, and top with the remaining slice of Canadian spinach bacon and half of the muffin.
