Any New Yorker will tell you that a good bacon, egg, and cheese sandwich is the perfect way to start the day. Chances are, you already have everything you need for this breakfast in your fridge. The key to a delicious sandwich is melty, gooey cheese, scrambled eggs that sit perfectly on the bread without hanging over the edges, and crispy fried bacon. To ensure the cheese melts, place it in the center of a hot fried egg and heat it through. It's easiest to wrap the cheese slices in the fried egg like a parcel, making a parcel that fits your bread.
The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:
- 2 large eggs
- 2 tbsp. whole milk
- 1 teaspoon of vegetable oil
- 2 slices sharp cheddar, about 30 g or any other cheese
- 2 slices fried bacon or pancetta
- 2 slices toasted white bread or 1 Kaiser roll, cut in half horizontally

Cooking the dish according to the recipe:
- In a small bowl, whisk together the eggs, milk, a pinch of salt, and a couple of turns of the black peppercorn grinder until smooth. Heat the vegetable oil in a medium nonstick frying pan over medium-low heat.
- Once the pan is hot, pour in the egg mixture and cook, without stirring, until the edges are set, about 1 minute. Using a spatula, carefully lift the edges of the fried egg and allow the uncooked egg to drip down. Once the egg is completely set, about 4 minutes, place the cheese slices in the center.
- Carefully lift each side of the egg and place it on top of the cheese to form a square about the size of your toast. Carefully flip the egg over, maintaining the shape, and cook for another 30 seconds to melt the cheese.
- Assemble the sandwich by placing the bacon on 1 slice of toast and topping it with a hot fried egg. Top with a second slice of toast and serve immediately.
Chef's Tips
You can substitute any cheese for the cheddar. American, provolone, Monterey Jack, Pepper Jack, and Swiss cheese melt well.
Crispy pancetta can be substituted for bacon. To make it, place the pancetta slices on a foil-lined baking sheet and place the baking sheet in a cold oven. Preheat the oven to 375°F (190°C) and bake until the pancetta is crispy, about 10 minutes. Transfer the pancetta to a paper towel-lined plate to drain any excess fat.
