These hot sandwiches will be a hit with all cheese lovers, as they're absolutely loaded with it. Melty, gooey cheese on the inside and a generous helping of crispy, toasted cheese on the outside—it's a dream! Add salty bits of fried bacon and a juicy, sweet tomato, and you've got yourself a perfect sandwich.

- 6 strips bacon, finely chopped
- 8 slices sourdough or white sandwich bread
- 3 cups grated sharp cheddar
- 1 tomato, thinly sliced

Cooking the dish according to the recipe:
- Place the bacon in a large nonstick skillet over medium heat and cook, stirring, until crisp, about 10 minutes. Transfer to a paper towel-lined plate to drain. Retain the rendered fat in the skillet.
- Heat the fat in a frying pan over medium heat. Place the bread in the pan and lightly toast one side. Remove from the pan and place toasted-side down on a work surface. Spread 2 cups of cheese and all of the bacon, tomatoes, and green onions among four slices of bread. Top with the remaining four slices, toasted-side up, to make four sandwiches.
- Divide 1/2 cup of the remaining cheese into 4 mounds in the pan and place a sandwich on top of each mound, pressing down. Cook for a few minutes, until the cheese is golden brown and melted. Divide the remaining 1/2 cup of cheese into 4 mounds in the pan, placing one next to each sandwich. Then flip each sandwich onto the mound of cheese and cook for a few minutes, until the center of each sandwich is melted.
