Create vegetarian sandwiches by sandwiching slices of roasted cauliflower, fresh pears, and cheese between two slices of honey mustard. Grill or fry them in a pan and enjoy a delicious and healthy sandwich, crispy on the outside and chewy on the inside. The cauliflower and pears add a pleasant juiciness, and their slightly sweet flavor, combined with the honey mustard, pairs perfectly with the savory flavors of the other ingredients, filling the sandwich with interesting flavors.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


Cauliflower

  • 1 head of cauliflower
  • 1/4 cup olive oil
  • 2 tsp mustard powder
  • 2 tsp smoked paprika

For honey mustard

  • 1/4 cup yellow mustard
  • 1 tbsp. grainy mustard
  • 1 tbsp. honey

To assemble a sandwich

  • 4 tbsp (60 g) salted butter, room temperature
  • 8 slices sourdough bread
  • 240 gr. Butterkese or Gruyère cheese, grated
  • 2 pears, thinly sliced

Cooking the dish according to the recipe:


  1. Prepare the cauliflower: Preheat the oven to 230°C (430°F). Trim the cauliflower, place the head cut-side down, and slice into 1-cm-thick slices. In a small bowl, combine the olive oil, mustard powder, paprika, and a pinch of salt and pepper. Brush the cauliflower slices with the herb oil. Place them on a baking sheet and roast in the oven for 10 minutes. Carefully flip the cauliflower, return it to the oven, and roast until golden brown, another 10-12 minutes.
  2. Meanwhile, prepare the honey mustard: In a small bowl, combine yellow and grainy mustard, and honey. Season with salt and pepper.

  3. To assemble the sandwich: Melt 2 tablespoons (30 g) butter in a griddle over medium-low heat. Spread honey mustard on 4 slices of bread and top with cheese, roasted cauliflower, pear slices, more cheese, and another slice of bread. Place 2 sandwiches on the griddle and cover with a metal bowl. Grill until golden brown and crisp on the outside and gooey in the middle, 4 to 5 minutes per side. Add the remaining 2 tablespoons (30 g) butter to the griddle and grill the remaining sandwiches in the same manner. Serve with the remaining honey mustard.
