Lemon is a rather unexpected ingredient for a hot cheese sandwich, but just give this recipe a try, and you won't regret it! It's important to slice it very thinly, so the citrus flavor will be subtle, refreshing, and unobtrusive. And these sandwiches will also delight everyone with a delicious Parmesan crust.

Cooking the dish according to the recipe:
- Cut each lemon circle into 6 wedges. Sprinkle with sugar and set aside.
- Place 4 slices of bread. Top each slice with 2 thin slices of mozzarella, then a few lemon wedges, then another slice of mozzarella. Top with the remaining bread. Spread half the butter on the top slices of bread and sprinkle each sandwich with 1 tablespoon of Parmesan.
- Heat a large skillet over medium heat. Place the sandwiches, Parmesan side down, in the skillet. Spread the remaining butter on the bread and sprinkle each with 1 tablespoon of Parmesan.
- Cover the pan and cook until the bread and Parmesan are golden brown, about 2 minutes. Flip the sandwiches over and cook until golden brown and the cheese is melted. Serve hot.
